Shrink is the number that decides whether a produce department makes money. Buying a grade down looks cheaper on the invoice and costs more at the bin, because the last third of the case never sells. We buy one grade — the one restaurants accept — so what you put out holds its look through the day.

Retail-ready cartons and honest counts

Lines come in the pack size that makes sense on a shelf, counted as described. Where a carton is a count rather than a weight — twelve heads of cos, a tray of twenty avocados — that’s what’s on the list and that’s what arrives.

The weekly note is worth more to you than to anyone

You’re the account that can act on market movement fastest. If cauliflower is cheap and excellent this fortnight, you can build a display around it and move volume; if lettuce took rain damage and prices are up, you can hold off rather than discounting damaged stock. That note goes out before the cut-off each week.

A midday window for restocking

Grocers usually take the 9am to 12pm window so the morning rush is done and there are hands free to face up. Choose the days and the window when you open the account.

Order smaller and more often, not bigger and cheaper

The instinct when a line is cheap is to buy a week of it. For produce that is usually the wrong call: the price advantage is a few dollars a carton and the cost of the last unsold third is the whole margin. Three deliveries a week at the volume you actually turn over will beat one big drop almost every time, and because delivery is included in the metro run there is no freight penalty for ordering that way.

It also means the display is built from produce bought two days ago rather than six, which is the difference a customer notices without being able to name it.

What we will tell you not to buy

A supplier who never talks you out of a line is selling, not supplying. If zucchini is out of season here and the interstate fruit is expensive and ordinary, we will say so — you are better off with a cauliflower display that week. Over a year that costs us a few cartons and saves you far more in produce you did not have to mark down.

How do I know where produce was grown so I can sign it correctly?

The growing region is shown against every line when you order and printed on every docket. That matters more for retail than for anyone — your signage is a representation to a consumer, and it has to be accurate.

What happens with short-dated or damaged stock?

Tell us and it’s credited. We would rather carry a credit than have you discount produce that shouldn’t have left the market.
